Dollar General Banana Nut Muffins

Description
A great breakfast treat for a cool fall morning! Easy to pack in lunch bag, or serve with a steaming cup of coffee when company drops in.
Ingredients
- 1 pk dollar general's "american fare" banana bread mix
- 1 c canned skim milk
- 2 eggs, or **egg beaters
- 1⁄2 c canola cooking oil
- 1⁄2 c dollar general walnuts, chopped
- 3 T flax seed
- 1⁄2 large banana; mashed with fork
Instructions
Preheat oven to 400 degrees.
Combine, using a spatula, muffin mix, milk, eggs, and oil in medium size mixing bowl. Fold in mashed banana, chopped walnuts, and flax seeds. Divide mixture into 12 paper lined muffin cups. Bake at 400, for 25 minutes. Test for doneness; bake a few more minutes if needed.
Notes
This is a *healthy* food, because of the skim milk, egg beaters, bananas, and flax seed. **If you've never used egg beaters, they cook up exactly like eggs in the shell.
