Dorothy I took oblong plastic planters last year and planted my mesclun. I had 3 long rows in my planter and we ate salads about all summer. Kept the planter out of the hot hot afternoon sun. Not a problem when the planter is mobile.
The heat took mine. It started bolting and tasted horrible after a while. I just had a salmon and a Greek salad which I made with my first cucumber of the season. It was so yummy.

That's the problem with growing lettuce down south. Lavender2 posted a plant ID, I think for some type of spinach that grows on a vine and tolerates heat.
Spring mix and mesclun mix are very much alike, if not the same. That's what I had for dinner. I sometimes take some left over meat and cut it up in small pieces and put it on top of my baby greens, and I will either steam some other veggies and throw them on top, too, or just have them raw. That's a good way to ensure that I get all my veggie servings in a day.
Your dinner sounded DELISH, Dorothy! Have you ever had any Greek cucumber soup? They use yogurt and mint in it! It's really nice and refreshing in warm weather. I plan to make Gazpacho all summer!
