Keep Hard Boiled Egg Yolks from Turning Green

I always complained that I could never keep hard boiled egg yolks from turning green when hard boiling them. My mom taught me a trick that will solve this problem easily. This is the way the French hard boil their eggs and they never get green yolks.

Put your eggs in the pan and cover with water. Put them on the stove and set the heat to high. Keep an eye on the eggs. As soon as the water comes to a roaring bubble, turn the heat off. Cover the pot immediately and allow the eggs to sit in the hot water for 10-15 minutes. They will continue to cook from the hot water, but they won't turn green.

This does work...

This is how my mom and grandma taught me how to do it - I've been doing it this way since I was a kid and it always works - although, I have the same problem as Dale, I sometimes leave them in there and I get some mildly green yolks - either way, for those new cooks, it's an easy way to remember how to cook them - just bring them to a boil, cover them and turn them off but if you don't want green yolks, take them out after 10 or 15 minutes...

That does work but

That does work but sometimes I forget and overcook and the yolks are green.   Thanks for the reminder.  Dale
