Zucchini Bread

Description
A Family Favorite enjoyed as a dessert or snack anytime of the day.
Ingredients
- 3 c all purpose flour
- 2 t baking soda
- 1 t salt
- 1⁄2 t baking powder
- 1 1⁄2 t cinnamon (ground)
- 3⁄4 c pecan nuts (chopped)
- 3 eggs, beaten lightly
- 2 c sugar
- 1 c vegetable oil
- 2 t vanilla flavoring
- 8 oz can of pineapple
- 2 c uncooked coursely shredded zucchini
- 1⁄2 c dried, fruit pieces(optional)
Instructions
Combine flour, soda, salt, baking powder, cinnamon and nuts and set aside.
Beat eggs, lightly, add sugar, oil and vanilla and beat until creamy, then stir in zucchini and pineapple and add this to dry ingredients, stirring only until moistened.
Add dried fruits if you prefer and put into 2 oiled, and well floured 9"x5"x3" loaf pans and bake for abt 1 hr at 350 degrees or until done. Cool,slice thin and enjoy!
Notes
This is a great way to use that extra zucchini,coursely shredd it,drain,put 2cups into freezer bags,and freeze it. Then when time to bake,thaw in microwave, drain any water or moisture and bake Zucchini Bread!
