Wild Rice Soup

Description
Our family's favorite soup! Don't stop trying wild rice soup recipes until you've tried this one!
Ingredients
- 6 T butter
- 1 T minced onion
- 1⁄2 c flour
- 3 c chicken broth
- 2 c cooked wild rice
- 1⁄3 c minced ham
- 1⁄2 c finely grated carrots
- 3 T chopped almonds
- 1⁄2 t salt
- 1 c half and half
Instructions
Melt butter in a medium sauce pan. Saute onions until tender. Blend in flour; gradually add chicken broth. Cook, stirring constantly until mixture comes to a boil; boil 1 minute. Stir in rice, ham, carrots, almonds and salt; simmer about 5 minutes. Blend in half and half; heat to serving temperature. Optional: add 2 Tbsp. Dry Sherry. Garnish with parsley or chives. ( ham can be substituted with chicken, turkey or bacon)
Notes
Wild rice is high in protein, fiber, and vitamins. It can be served as a first course or main course.
