Description
My first grandson's favrite
Ingredients
- 2 1⁄2 c sweet potatoes
- 3⁄4 c heavy cream
- 1 t nutmeg, cinnamon, and allspice
- 3 large eggs
- 1 1⁄2 c sugar
- 1⁄2 t salt
- 2 t pure vanilla extract
Instructions
Preheat oven 350 degrees. Peel and cube sweet potatoes. Cover with water, add salt and cook until tender. Drain sweet potatoes. In a large mixing bowl add sweet potatoes, butter and sugar and mix well. Add eggs one at a time and mix well. add cream, seasonings, and 2 teaspoons of vanilla. In two 9 inch pie plates add your favorite pie crust and pour mixture in to each. Bake for 1 hour until center is set.
Notes
I serve this for every holiday. It is a variation of my mothers. She sometimes uses canned sweet potatoes and evaporated. I like fresh sweet potatoes better but I use evaporated milk sometimes.
