Description
Yummmy Gooood!!!! Squash Relish
Ingredients
- 10 c squash, chopped (i used a mix of yellow & green for color)
- 4 c onion, chopped
- 2 sweet green pepper, chopped
- 1 small jar pimentoes, drained & cut up
- 2 tbsp salt
- 2 1⁄4 c apple cider vinegar
- 2 1⁄2 c sugar
- 1 tsp tumeric powder
- 1 tsp nutmeg
- 1 tsp prepared mustard
- 1 T cornstarch or flour
- 1 T celery seed
Instructions
Mix the first 5 ingredients together and let stand over night in ice water in the refrigerator. Next morning drain off water and add remaining ingredients. Combine all in a large stock pot and let it simmer for 30 minutes. Then ladle into jars and seal.

Melissa that looks like a very good relish recipe. I can squash pickle and it tastes as good or better than cucumber pickle. Thanks for sharing can't wait to try making that recipe.
