Description

Yummmy Gooood!!!!  Squash Relish

Ingredients

  • 10 c squash, chopped (i used a mix of yellow & green for color)
  • 4 c onion, chopped
  • 2 sweet green pepper, chopped
  • 1 small jar pimentoes, drained & cut up
  • 2 tbsp salt
  • 2 1⁄4 c apple cider vinegar
  • 2 1⁄2 c sugar
  • 1 tsp tumeric powder
  • 1 tsp nutmeg
  • 1 tsp prepared mustard
  • 1 T cornstarch or flour
  • 1 T celery seed

Instructions

Mix the first 5 ingredients together and let stand over night in ice water in the refrigerator. Next morning drain off water and add remaining ingredients. Combine all in a large stock pot and let it simmer for 30 minutes. Then ladle into jars and seal.

Squash Relish

That sounds great. I make a pear relish and cucumber relish that is yummy also. I have never done squash relish. I will have to try this one now.

Melissa that looks like a very good relish recipe.  I can squash pickle and it tastes as good or better than cucumber pickle.  Thanks for sharing can't wait to try making that recipe.
