Quick Chicken and Dumplings

Description

A delicious quick meal

Ingredients

  • 3 lb chicken parts or whole chicken
  • 2 t salt
  • 1 t garlic powder
  • 1 t each black and red pepper
  • 1 c chopped onion
  • 1 c chopped carrots
  • 1 cn biscuits
  • 1 cn cream of chicken soup

Instructions

Rinse chicken parts, season with the salt, peppers, garlic powder, add the onions and cook in a covered dutch oven over medium heat, with enough water to cover it. Add the onions and cook until chicken is tender. Once chicken is done,remove from pot and debone when cool. Once chicken is deboned return it to the broth and add the carrots and cream of chicken soup and simmer 10 minutes. I mix the cream of chicken and 1 can of water in a bowl and mix well before adding to the chicken. After simmering take 1 can of your favorite store bought biscuits and cut each in 3 strips. Add to top of the chicken until you have it covered with biscuits. Add the cover and cook over medium low heat until biscuits are ready about 20 minutes, replace cover if not done.

Notes

My son is now 33 but when he was growing up, his favorite birthday meal was Chicken and Dumplings. I serve this with cornbread and a salad.

Could you...

Use a rotiserrie chicken and debone it before combining it with the rest of the ingredients? This sounds wonderful!

Yes you can

Oma2 that will make it even quicker, then use chicken broth instead of boiling your chicken. I love cheese Lisa, sounds delicious that way. Sometime I used flour tortillas cut up for my dumplings.
