Pasta with Three Greens

Description
Ingredients
- 1 lb whole wheat penne
- 2 T olive oil
- 3 clv garlic, finely chopped
- 1⁄4 t red pepper flakes
- 20 c broccoli, collard, kale
- 1⁄2 c water
- 1⁄2 c grated parmesan cheese
- 1 c toasted pine nuts
Instructions
Cook Penne according to directions on package. Do not put in salt or fat.
Meanwhile, heat olive oil in nonstick skillet over medium heat until hot. Add garlic and red pepper flakes; cook for 2 minutes or until garlic is golden stirring constantly.
Stir in half the greens and water. Increase heat to medium-high; cook 2 minutes or until greens are wilted. Stir in remaining greens. Cover. Reduce heat to medium. Cook 7 minutes or until greens are tender, stirring ossacionally.
Drain Penne, reserving 1/4 cup cooking water. Return penne to saucepan. Add cheese and greens and reserved cooking water. Toss until mixed well. Sprinkle with pine nuts, if desired.
