GINGERED LEMONY BEETS

Description
Mom loved beets - this was one of her favorites - made with those fresh beets from your garden and save the beet tops to put in tossed salad
Ingredients
- 1 lb beets, peeled and sliced
- 2 t sugar
- 3⁄4 t cornstarch
- 1 c water
- 1⁄2 t finely shredded lemon peel
- 1 T lemon juice
- 1⁄8 t ground ginger
Instructions
In large saucepan cook the beets covered in boiling water for 20 to 30 minutes or till they are tender, drain.
In a small saucepan stir together sugar and cornstarch. Stir in water, lemon peel, lemon juice and ginger. Cook and stir constantly till it is thick and bubbly. Cook an stir 2 more minutes. In a serving bowl stir together beets and lemon mixture. Serve it warm
