GINGERED LEMONY BEETS

Description

Mom loved beets - this was one of her favorites - made with those fresh beets from your garden and save the beet tops to put in tossed salad

Ingredients

  • 1 lb beets, peeled and sliced
  • 2 t sugar
  • 3⁄4 t cornstarch
  • 1 c water
  • 1⁄2 t finely shredded lemon peel
  • 1 T lemon juice
  • 1⁄8 t ground ginger

Instructions

In large saucepan cook the beets covered in boiling water for 20 to 30 minutes or till they are tender, drain. In a small saucepan stir together sugar and cornstarch. Stir in water, lemon peel, lemon juice and ginger. Cook and stir constantly till it is thick and bubbly. Cook an stir 2 more minutes. In a serving bowl stir together beets and lemon mixture. Serve it warm

Wow!!

Well, I do love beets, although I like mine best roasted, but this is a wild sounding recipe! You've combined two of my favorites: lemon and ginger, and I never would have thought to bring them together with beets! I'm going to try this for sure!!!!!!
