Description
Ginger lovers will delight with this simple, inexpensive soup. People will think you are a fancy gourmet cook when they taste this! This is just for two people, so double and triple to serve more!
Ingredients
- 3⁄4 c apple juice
- 1 T dry sherry
- 2 sli thin slicesgingerroot
- 2 sli thin slices apple (optional)
- fresh mint (optional)
Instructions
In medium saucepan stir together the apple juice, sherry, gingerroot and 1/4 cup water. Bring it to a boil. Reduce heat: cover and simmer for just 1 minute. Remove the gingerroot and discard.
OPTIONAL
If you like mint, put a bit on top of soup when you serveand an apple slice.
