Description

I sure remember when I use to eat this - easy to do and kids like it.

Ingredients

  • 1 1⁄3 c sweetened condensed milk
  • 3 c (3/4 pound) shredded coconut
  • 1⁄2 t vanilla
  • 1⁄8 t salt

Instructions

combine ingredients and drop by teaspoons onto a greased cookie sheet. Bake at 375 F for 15 minutes. Remove from pan while hot. Makes about 30 cookies

Our family calls these coconut macaroons. My sister in law made them for a family get together this past Thursday. Y'all if you have never made these you ought to try them.

Isn't it interesting how recipes get different names - it has been great reading all the recipes submitted - found several I want to try. Because I am diabetic I have to watch what I eat so I feed others all the stuff I can't have. Thanks for sharing the info. Have great day!

My husband is diabetic as well. I think I have posted a recipe for meringue kisses made with whipped egg whites and use Splenda instead of sugar.

Sweet things

Found out that adding 1/2 cup nonfat dry milk powder and 1/2 teaspoon baking soda for every 1 cup splenda helps things rise better. They now print this info on splenda bags. I have been trying the Clabber Girl sweetner with the baking and don't find much difference. Also when sweetening tea I always put it in when tea is warm and seems to incoporate better sweet taste. Also am going to try this "stevia" plant leaves that is suppose to be really sweet and even better. But it is extremely expensive to buy already processed. Have you ever tried to grow or use Stevia?

I do like the Clabber Girl

I do like the Clabber Girl sugar substitute to bake with better than Splenda especially with a banana bread recipe I use it with. Haven't tried using the non fat dry milk but I do use some baking soda and or baking powder when I bake with Splenda. I have used Stevia in tea but haven't required the taste for it.

Did the Stevia have unusual taste? I have not tried it yet. Did you use leaf from plant or buy it processed? I have also found some recipes using both baking soda and baking powder rise a bit better. Got to run, my sweetie is coming home from work. Talk to ya all tomorrow!

Cant' remember how it tasted

Cant' remember how it tasted just remember didn't like the taste. I tried the processed Stevia in packs from the local health food store.
